Strawberry Nutella Muffins
 
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1/4 cup canola oil
1 large egg
1/3 cup buttermilk
1 teaspoon vanilla extract
1 cup fresh strawberries, chopped
1/3 cup Nutella
Turbinado sugar (raw sugar), to sprinkle on tops
 
Preheat oven to 350 degrees F. Line a 12-cup standard muffin tin with paper liners; set aside.
 
In a large bowl, combine flour, salt, baking powder and sugar; set aside.
 
In a small bowl, whisk together canola oil, egg, buttermilk and vanilla. Pour mixture over dry ingredients and stir together just until most. Fold in the strawberries.
 
Scoop a spoonful of batter evenly into the muffin trays. Drop 1-2 teaspoons of Nutella into the center of each cup. Top with remaining batter to completely cover the Nutella. Sprinkle tops with turbinado sugar.
 
Bake for 17-20 minutes, or until a tester inserted into centers comes out clean. Remove from oven and cool on a wire rack. Yields: 12 muffins.
