Chocolate Chip Banana Bread
Ingredients
· 1 1/2 cups All Purpose flour
· 1 1/4 tsp baking powder
· 1/2 tsp. baking soda
· 1/2 tsp ground cinnamon
· 1/8 tsp salt
· 2 slightly beaten egg whites
· 4 medium, overripe bananas
· 3/4 c. sugar
· 1 teaspoon vanilla
· 1/4 c. vegetable oil
· 1 c. semi sweet chocolate chips
Instructions
1. Preheat oven to 350 degrees F.
2. Mash the bananas (I usually beat mine in my stand mixer using the paddle attachment) until mostly smooth.
3. Mix in the egg whites, sugar, vanilla, and oil, mix well.
4. Add the flour, baking powder, baking soda, cinnamon, and salt. Only mix until the batter forms. Fold in the chocolate chips using a rubber spatula.
5. Pour batter into a greased and parchment lined loaf pan. A standard loaf pan will need to bake for about 45 minutes. Baking time will vary depending on the size of the loaf pan. A toothpick should come out clean before the removing the bread from the oven.
6. Let cool for at least 10 minutes before slicing.
